Wha't a good config tools for IPTABLES? I would prefer something thats ncurses based, but other things will work.

I'd have to say the command line too, but there is a nice GTK based one called firestarter

I'd have to say that the best thing to do is to learn the basics of netfilter, write your own script that's customized for your environment, and then configure your firewall by running that script. :) Modify as necessary, rinse, repeat.
